Grillo

The Grillo is a native Sicilian vine white grape, which has particular importance for the production of Marsala wine, as it is one of the grape varieties used.

TheGrillo “Zagara & Jasmine”is a young and fresh wine, aged in steel. The colour is golden yellow reminiscent of the ripe wheat, with green highlights, typical of the olive trees that surround our territory.

This wine has fresh aromas of apple and almond, the taste is dry, harmonic and persistent.

Grape variety and origin:

100% Grillo, cultivated in the sandy soils of Calatafimi-Segesta (350 meters above sea level).

Winemaking:

Fermentation and aging in stainless steel at a controlled temperature (18°C).

Sensory profile:

Straw color with golden reflections, mineral notes and acidic freshness.

Pairings:

Ideal with crudités, fish and white meats, also perfect as an aperitif.

Red

Nero d'Avola

Nero d'Avola is a native grape variety, cultivated in all the Sicilian territory.

Our wine is made from grapes harvested by hand 100% Nero d'Avola, aged for a year in barrels. It has red cherry colour, scented sweet notes of vanilla and intensely spicy: cinnamon, memories of mint, and a fruity plum; lively acidic.

Delicious on the palate, with hints of herbs and cherry, it is persistent and very pleasant in its touch of coffee.

Grape variety and origin:

100% Nero d’Avola from the calcareous soils of the province of Palermo.

Refinement:

6 months in 25 hl oak barrels, followed by rest in steel tanks.

Sensory profile:

Intense black cherry red, aromas of vanilla, cinnamon, and plum; lively acidity.

Pairings:

Perfect with red meats, aged cheeses, and spicy dishes.

Rosé

Rosé

This Rosé is made from 100% Nero d'Avola grapes cultivated in the calcareous soils of Calatafimi-Segesta.

It ferments in steel tanks at a controlled temperature, keeping the fruit's freshness intact.
It has aromas of wild strawberry, cherry, and pomegranate, with a lively, savory, and balanced taste.

An elegant, essential, authentically Sicilian rosé.

Grape variety and origin:

100% Nero d’Avola from the calcareous soils of Calatafimi-Segesta.

Winemaking:

Short maceration and fermentation in stainless steel at a controlled temperature (15–16°C).

Sensory profile:

Bouquet of wild strawberry, cherry, and pomegranate; fresh.

Pairings:

Excellent with seafood, fresh cheeses, and light Mediterranean cuisine.
